【Squash Cupcakes】Roughly slice and cube 400g of washed unpeeled butternut squash, then place into a food processor and pulse until finely minced.
【Squash Cupcakes】Add 400g brown sugar, 4 eggs, a pinch of salt, 300g plain flour, 2 heaped tsp baking powder, 1 tsp cinnamon, a handful of walnuts, and 175ml extra virgin olive oil to the food processor. Blend until smooth.
【Squash Cupcakes】Spoon the batter into muffin cases until about three-quarters full. Bake in the oven at 180°C (350°F) for about 20 minutes until an inserted knife comes out clean, then let cool for 10 minutes.
【Squash Cupcakes】Prepare the frosting by mixing clementine zest, lemon zest, lemon juice, sour cream, scraped vanilla pod seeds, and 2 tbsp icing sugar until thickened. Spoon generously over the cooled cupcakes and finish with clementine zest and a light dusting of crushed dried lavender.
【Veggie Curry】In a roasting tray, mix 1 heaped tsp curry paste, 2 tbsp oil, a splash of vinegar, and salt. Chop unpeeled parsnips, carrots, courgette, butternut squash, and cauliflower florets into bite-sized chunks, toss thoroughly in the spiced paste, and roast at 190°C–200°C for 45–50 minutes until charred and golden.
Butternut squash skin is completely edible and tender once cooked, roasted, or stewed; you do not need to peel it unless a silky-smooth puree is desired.
Frozen vegetables like spinach, peas, and soffritto mixes are cost-effective time-savers that provide excellent depth of flavour.
For the chili, partially mashing a portion of the squash, beans, and sausage creates a rich, creamy consistency without adding excess dairy or thickeners.
When baking pasta rotolo or sausage roll wreaths, oiling fresh herbs (sage, rosemary, bay) prevents them from burning while releasing their aromatic oils.
