Step 1
Cut the potatoes into irregular bite-sized chunks (rangiri) and soak in water for about 5 minutes to remove excess starch. New potatoes can be left unpeeled, but regular potatoes should be peeled.
Step 2
Slice the onion into 5mm strips, remove the core, and separate the layers.
Step 3
Drain the potatoes well, place them in a heat-resistant bowl, cover loosely with plastic wrap, and microwave at 600W for 7 minutes.
Step 4
Place the pork in a plastic bag, break it up slightly by hand, add 1 tablespoon of potato starch, and shake the bag to coat evenly.
Step 5
In a separate container, combine 2 tablespoons of soy sauce, 2 tablespoons of mirin, and 2 teaspoons of sugar. Mix well until the sugar has dissolved.

Important Notes
๐ก Pre-cooking the potatoes in the microwave significantly reduces cooking time and enhances the natural sweetness of the potatoes.
๐ก Coating the pork thinly with potato starch seals in moisture, making it juicy and tender while helping the sauce adhere better.
โ ๏ธ Since butter flavor dissipates easily with heat, be sure to add it at the very end just before turning off the heat and quickly toss to coat.
